I would imagine the same way you beat it on a warrior.... run upto it with max Dagger Mastery and tear it to shreds. (A/W using Frenzy been the optimum slaughter-fest)

Really.... wow Assassins really do suck in that case. If my hammer warrior can beat the Doppel to death in 7 seconds (my record) the assassin should surely be able to do its trademark 'burst damage' and kill it (before it kills you )

Or maybe warriors just suck so much that an npc warrior is a pushover whereas the assassin instantly owns you.

8 Second Assassin Doppleganger Defeat
Easy A/W Doppleganger Defeat
Stats:
12+1 Crit Strikes
12+1+3 Dagger Mastery
Skills:
Frenzy
Locust's Fury
How:
Cast Locust Fury immediately. Do NOT use Frenzy, and just attack. Done.
This could more than likely be done without the use of Locust's Fury, in case you haven't capped it yet. Try it, lemme know.

A/W Easy Doppleganger Defeat
13 dagg
9 shadow
14 crit
jagged strk
fox fangs
horns of the ox
falling spider
wild blow
crit def
shadow ref
Cast crit def and keep it up with wild blow... then do your 4 hit combo and watch him die while you barely take hits... The Doppleganger AI isn't smart enough to use crit def/wild blow effectively (~.^)

I've never really tried fighting the Doppelganger with my Sin, but I have to ask, would it really be able to pull of combos correctly? I mean, it's only a npc. If you come with a combo such as seeping wound--> jagged strike--> horns of the ox--> falling spider--> twisting fangs, would the doppelganger be able to use it too, or would it use skills randomly in the wrong order, and just fail?

No.
Ive done both. I killed my Sin doppleganger 8 seconds, first try. Warrior was around the same.
You do know your not supposed to USE frenzy yourself, right?

Attribute points really don't matter since the doppleganger only mirrors your skill bar, not your attribute points, but still I like this idea

IIRC, the doppleganger uses the skills on his/her/your bar from left to right. So any attack combo you come up with should be on your bar in reverse order (that is right to left).

a real fast way to beat the doppelganger that i found, was to set your secondary to N, then fill your bar with health sacrifices... just go in and start auto attacking and watch him sacrifice himself to death. - just remember not to put any points into necro atribs, so he doesn't get any benifit from the spells.
